This past week and weekend was a huge flurry of activity and shenanigans. Since it is of a personal and family nature, I will of course try to protect the identities of the innocent (and not-so innocent), and instead focus on a DELICIOUS dinner that my cousin, mark and myself made on Saturday. Here’s a really quick salad that you can make, which has numerous leftover uses.
Tomatoes, Cucumbers, Fresh Mozzarella, Fresh Basil, Olive Oil, Balsamic Vinegar, Salt
Slice (or dice) Tomatoes, Cucumbers and Mozzarella – use equal parts of each
Finely chop basil
Mix all in a bowl, drizzle a little oil, little vinegar, and the tiniest bit of salt.
The dish can be enjoyed alone, on top of rice or pasta, in a tortilla shell, etc, etc. You can add a little onion, or mushroom, or whatever, really…..The possibilities are endless and delicious!
